The Everything Salad

~The Everything Salad~

I had this at a local restaurant and you can add whatever it is that you like. I used mostly the same ingredients they did, but left out what I don't eat and that is the red onion, tomatoes and avocado.

A variety of lettuce such as: Butter, romaine, iceberg and radicchio and spinach chopped well
a can or fresh shoepeg corn (drained)
small diced cucumbers
diced artichoke hearts
asparagus
grilled chicken breast (cut into pieces)
shrimp cut into pieces
diced apples pieces-gala or granny smith
Sprinkle with almond slices

Toss together and add creamy cucumber dressing or poppy seed is good too.

(for more fiber and protein you can sprinkle cooked Quinoa or another grain over the top)
